- Heat olive oil in a skillet over medium-high heat.
- Season the flank steak with fajita seasoning, salt, and pepper.
- Sear the steak for 4-5 minutes on each side for medium-rare, then remove and let rest.
- In the same skillet, add sliced onions and bell peppers, sautéing until soft and caramelized, about 7-10 minutes.
- While the veggies are cooking, rice the cauliflower in a food processor until fine and light.
- Steam the riced cauliflower for 3-4 minutes until tender but still slightly firm.
- Slice the flank steak against the grain and arrange it in bowls with the sautéed vegetables and cauliflower rice.
- Drizzle lime juice over the top and garnish with cilantro before serving.
