- Preheat your oven to 400°F (200°C).
- In a large bowl, combine olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, salt, and pepper.
- Add the chicken breasts to the bowl and toss until well coated in the marinade.
- On a large baking sheet, arrange your marinated chicken and surround it with the seasonal veggies.
- Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the veggies are tender.
- Remove from the oven and let rest for 5 minutes before serving.
Notes
For optimal flavor, marinate the chicken for at least 10 minutes before cooking. Serve with a light salad or some whole grains for a complete meal.
