  • 4 boneless skinless chicken breasts
  • 2 lemons zested and juiced
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 4 cups seasonal veggies such as zucchini, bell peppers, and carrots
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
