Method
- Prepare the skewers by soaking wooden skewers in water for at least 30 minutes.
- In a large bowl, combine ground beef, garlic, onion, cumin, coriander, paprika, salt, pepper, and parsley. Mix well until fully blended.
- Divide the mixture into equal portions and mold them onto the soaked skewers. Shape them into sausage-like forms, about 1 inch wide.
- Preheat your grill or grill pan over medium-high heat for about 10 minutes.
- Grill the skewers for about 10-12 minutes, turning occasionally until browned and cooked through.
- While the skewers are grilling, make the tzatziki by mixing Greek yogurt, grated cucumber, lemon juice, and dill in a bowl.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
- Serve the kofta skewers warm with a generous side of tzatziki for dipping.
Notes
For optimal flavor, allow the beef to marinate for an hour before cooking. Skewers can also be reheated on the stove if not consumed right away.
