Method
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine chicken breasts with olive oil, garlic, lemon juice, oregano, salt, and pepper.
- Arrange the seasoned chicken on one side of a large baking sheet. Add cherry tomatoes, zucchini, bell pepper, and red onion on the other side.
- Drizzle the vegetables with a little additional olive oil and sprinkle with salt and pepper.
- Roast everything in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the veggies are tender.
- Remove the baking sheet from the oven and let it rest for 5 minutes before serving.
- Garnish with fresh herbs, if desired, and serve warm.
Notes
For optimal flavor, use fresh herbs when serving. Leftovers can be stored in an airtight container in the fridge for up to three days.
