Flavorful Enchilada Ground Beef Casserole Recipe

This Enchilada Ground Beef Casserole combines savory ground beef with a rich enchilada sauce, layered between tender tortillas and topped with melted cheese, making it an irresistible dish for family gatherings or cozy weeknight dinners.

Ingredients
  

  • 1 pound ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 can 10 oz enchilada sauce
  • 6 corn tortillas cut into strips
  • 1 cup shredded cheddar cheese
  • 1 can 15 oz black beans, drained and rinsed
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish optional

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until browned.
  3. Add the diced onion and garlic to the skillet, cooking until soft.
  4. Stir in the drained black beans, chili powder, salt, and pepper.
  5. Pour in the enchilada sauce, stirring to combine.
  6. Layer half of the tortilla strips in the bottom of a greased casserole dish.
  7. Spread the beef and bean mixture over the tortilla layer.
  8. Top with the remaining tortilla strips, then sprinkle with cheddar cheese.
  9. Cover the dish with aluminum foil and bake for 25 minutes.
  10. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  11. Garnish with fresh cilantro before serving.
