Delicious Mozzarella Pasta with Smoked Sausage

Ingredients
  

  • 12 ounces of pasta
  • 8 ounces of smoked sausage
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 can 14.5 ounces diced tomatoes
  • 1 teaspoon Italian seasoning
  • 8 ounces fresh mozzarella cubed
  • 1/4 cup fresh basil chopped (optional)
  • Salt and pepper to taste

Method
 

  1. Cook the pasta according to package instructions until al dente.
  2. In a large skillet, heat olive oil over medium heat and sauté the diced onion until translucent.
  3. Add minced garlic and sliced smoked sausage; cook until the sausage is browned.
  4. Stir in the diced tomatoes and Italian seasoning; simmer for 5-7 minutes.
  5. Add the cooked pasta to the skillet, tossing to combine with the sauce.
  6. Fold in the cubed mozzarella and let it melt slightly.
  7. Adjust the sauce with reserved pasta water if necessary; season with salt and pepper to taste.
  8. Finish with fresh basil if desired, tossing gently before serving.
