  • 4 chicken breasts about 1.5 lbs
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 large eggs
  • 3 cloves garlic minced
  • 1/2 cup unsalted butter
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, whisk the eggs until smooth. In another bowl, combine the breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper.
  3. Dip each chicken breast into the egg wash, letting any excess drip off, then coat in the breadcrumb mixture, pressing it on firmly.
  4. Place the coated chicken breasts on the prepared baking sheet and drizzle with melted butter.
  5. Bake for 20-25 minutes or until the chicken is cooked through and the crust is golden brown.
  6. Meanwhile, melt the additional butter in a small skillet over medium heat and sauté the minced garlic until fragrant, about 1-2 minutes.
  7. Once the chicken is done, coat it generously with the garlic butter right before serving.
